Day 2, with a little help from my friends.

It was day 2 of Edgar.
It is not yet sinking in.

A fresh coat of white.

Lots of hands in the same space, doing different jobs.

Rain that seemed like snow, it fell ever so slowly. We all stopped working and stared a bit.

Dinner. There are things that I will still only cook at home. No worries my love.

Quick creamy chicken pasta

Good quality pasta
4 French shallots, finely chopped
3/4 cup white wine
3 cloves garlic, minced
1 chicken breast, sliced
3/4 cup chicken stock
3/4 cup 15% thick cooking cream
1 yellow pepper, sliced
Chili flakes
Salt and Pepper

Put your pasta water to boil. On medium heat, add the shallots and butter to a large frying pan, cook for 5 minutes until golden. Add the chicken, garlic & season with salt and pepper. Sauté for a few minutes. Add wine, cook down. Add chicken stock, cook for a few minutes, add cream and peppers and heat through. Taste sauce, adjust with salt and pepper. Add pasta to the sauce, mix well, simmer for a few minutes. Garnish with parmesan and chili flakes as desired.
