
For some reason, I absolutely want a cinnamon bun/brioche for breakfast at Edgar.
This is test number 2 and I am still not happy with it. I did a second variation of the dough and will do a third soon... Maybe I feel 5 again and I want to see that in a cloche and it being so marvelous and yummy and gooooey.
Cinnamon Bun I will conquer you.

are you testing dough or filling or both?? i feel this is crucial to discussing the success of cinnamon buns and other brioches.

Mary, do you have a go-to recipe? I will try making a brioche/hot cross bun type dough the next time. This was not sweet enough and too dense.
The other one was too dry...

Oh no, I don't have a go-to recipe, cause I'd be as big as a house if I baked them all the time. The weather is making me want to bake, though, so if I come up with anything I'll let you know. Best of luck with it all!

oh yes, a cinnamon bun is a MUST! Very hard to find the perfectly gooey type though!
