Wednesday Morning Pancakes



2 eggs
1 cup yoghurt
1/3 cup milk
1 cup flour
2 Tbsp sugar
1 tsp vanilla extract
2 tsp baking powder

With a whisk, incorporate the dry into the wet. Let rest for 30 minutes. Enjoy any day of the week.

Great recipe! I substituted flour for ground almonds and it works a treat. May I suggest chicken, cottage cheese and lettuce, wrapped in one of these pancakes = Yumm!

Marysol! I love your pancake recipe! However, whenever I cook the pancakes they seem to burn really easily. I try to cook them on a very low temperature, but do you have any suggestions?

I find pancakes tricky. It usually takes me a few before I get going and make them perfect - my first ones come out looking like little white ghosts or waaaaay overcooked! I heat up my pan on medium, then turn it down. The pan will retain the heat and then cook to golden perfection. I hope this helps!!
