Aged Cheddar and Apple Melt

Sauteed apple, aged cheddar, tiny raisins, little bursts of sweetness - how could I not want to start my week this way?

So that's the way to combine cheese and fruit!

My melting cheese on a piece of apple pie didn't work particularly well...

Going to try this at home soon...And come fall, with Niagara peaches too!

This has totally inspired me to go out and register for a panini press.

What kind do you have? Do you have a brand that you recommend? Or can I just use a Foreman grill?

Sara, i went all out for the grill...
I had tried a few before buying it as i borrowed some from friends.

I knew I wanted the grills to come off - that is soooo important. We bought The Cuisinart Griddler - you cannot even imagine the remorse when I stepped out of the shop paying almost $200 for a grill, but a few months later, i do not regret one bit. I highly recommend it.
