
How to make a burger night a bit more special?
Beet chips.

We also had a very fresh salad.
Red leaf lettuce, cilantro, cucumber, mint (from the garden yeah!!! it's out!!!) mango, lime, rice vinegar, garlic, oil, sambal.
To make the chips, cook the beets until just tender, slice them really thin. Mix with vegetable oil and a bit of sea salt. Cook at 300F for about 30 minutes. Enjoy!

My challenge is to slice the beets really thin. What tool did you use to do it?

it is tricky to slice thinly and evenly... A few things help.
* Do not overcook your beets. You should not be able to pierce them through the middle. Maybe 15 minutes in the oven, 5 minutes boiling...
* I use a mandolin to slice evenly, I know, I cheat. If you buy one (they are $30 in any asian food store), be mindful of your fingers!! I have sliced a knuckle off once and now am really careful.
